Tasting Notes
This unique Grüner Veltliner sparkling wine offers fresh aromas of green apple and Asian pear along with hints of apricot and baking spices. Its delicate texture is beautifully balanced by crisp natural acidity. Lively notes of apple and citrus give way to a remarkably creamy finish.
Vineyard Notes
Located on the slopes of the Santa Lucia mountain range in Monterey County, Black Jack Vineyard is owned and farmed by the Rava family, a third-generation farming family. The 41-acre block of Grüner Veltliner was one of the first plantings of this varietal in California, and it is the largest planting of Grüner Veltliner in the United States. The vineyard enjoys foggy mornings, afternoon coastal breezes and chilly nights, resulting in expressive, aromatic fruit.
Production Notes
Rava sparkling wines are crafted using time-honored méthode champenoise techniques. The cuvée, or base wine for this sparkler consists of 100% Grüner Veltliner, which was barrel fermented in a combination of neutral French and American oak barrels. The cuvée, along with a mixture of sugar, yeast and nutrients, was bottled for the second fermentation where it benefited from contact with the lees. The wine was then riddled and disgorged using state-of-the-art equipment at the Rava sparkling wine facility. A small dosage was added before the sparkling wine was corked.
