Vineyard
Located on the slopes of the SAnta Lucia mountain range in Monterey County, Blackjack Vineyard is owned and farmed be the RAva family, a third-generation farming family. The 41-acre block of Gruner Veltliner was one of the first plantings of this varietal in California, and it is the largest planting of Gruner Veltline in the United STates. The vineyard enjoys foggy mornings, afternoon coastal breezes and chilly nights, resulting in expressive, aromatic fruit.
Winemaking
Rava sparkling wines are crafted using time-honored methode champenoise techniques. The cuvee, or base wine for this sparkler consists of 1--% Gruner Veltliner, which was barrel fermented in a combination of neutral French and American oak barrels. The cuvee, along with a mixture of sugar, yeast and nutrients, was bottled for the second fermentation where it benefited from contract with the lees. The wine was then riddled and disgorged using state-of-the-art equipment at the Rava sparkling wine facility. A small dosage was added before the sparkling wine was corked.
